چکیده

A voltammetric electronic tongue consisting of a composite metal base electrode array for discrimination of basic taste has been presented. The electrode array consisting of Gold, Nickel, Palladium, Copper and Glassy Carbon as working electrode, has been used for transforming information of taste substances into electric signal. The electrodes output show different patterns for chemical substances that have different taste qualities such as saltiness, sourness,

Voltammetric electronic tongues – basic principles and applications

This review examines basic principles and applications of voltammetric electronic tongues. It is introduced by a description of the concept of electronic tongues or taste sensors followed by a general overview of electrochemical measurement principles that have been used for electronic tongues. A special emphasis is given on measurement principles for voltammetric electronic tongues, also inclu...

A High Sensitivity IDC-Electronic Tongue Using Dielectric/Sensing Membranes with Solvatochromic Dyes

In this paper, an electronic tongue/taste sensor array containing different interdigitated capacitor (IDC) sensing elements to detect different types of tastes, such as sweetness (glucose), saltiness (NaCl), sourness (HCl), bitterness (quinine-HCl), and umami (monosodium glutamate) is proposed. We present for the first time an IDC electronic tongue using sensing membranes containing solvatochro...

Detection of Edible Oils Based on Voltammetric Electronic Tongue

A voltammetric electronic tongue to classify five different types of edible oil samples is described in this study. The standard three-electrode configuration composes the sensor array: gold electrode, platinum electrode and saturated calomel electrode. Using cyclic voltammetric measurement, respectively, on five different types of edible oil samples (peanut oil, corn oil, soybean oil, sesame o...

Assessment of Taste Attributes of Peanut Meal Enzymatic-Hydrolysis Hydrolysates Using an Electronic Tongue

Peanut meal is the byproduct of high-temperature peanut oil extraction; it is mainly composed of proteins, which have complex tastes after enzymatic hydrolysis to free amino acids and small peptides. The enzymatic hydrolysis method was adopted by using two compound proteases of trypsin and flavorzyme to hydrolyze peanut meal aiming to provide a flavor base. Hence, it is necessary to assess the ...

Discrimination of Rice with Different Pretreatment Methods by Using a Voltammetric Electronic Tongue

In this study, an application of a voltammetric electronic tongue for discrimination and prediction of different varieties of rice was investigated. Different pretreatment methods were selected, which were subsequently used for the discrimination of different varieties of rice and prediction of unknown rice samples. To this aim, a voltammetric array of sensors based on metallic electrodes was u...
